Another milk substitute you can use that will actually work rather well, dry milk. If you keep dry milk on hand, you can use this instead of regular milk. The dry milk is actually milk solids that are dehydrated. When you add water to the solids it turns into skim milk. In cooking you can’t tell the difference.

Another substitute that you can use to create healthy soul food cooking is chicken broth or stock. A good example is mashed potatoes, instead of using milk or evaporated milk, use the broth. For butter, you can actually use some of the butter substitutes they mix rather well and still give the wonderful buttery flavor that all of us crave.
